When we think of soufflé, we think of sweet soufflés made with bitter chocolate , tahini or fruit , but savory soufflés are also quite delicious. This soufflé recipe, which uses cauliflower as the main ingredient, is so delicious, so light and so easy to make that it will make even those who don't like cauliflower eat it with appetite!
Prepared similarly to the classic bechamel sauce recipe, the cauliflower mixture comes together with egg whites that we have fluffed up like clouds. Our soufflé gets its soft, foamy texture from here, and the various cheeses added to it add even more flavor.

Ingredients for Cauliflower Soufflé Recipe
- 1.5water glassmilk
- 1externalgarlic
- 1/2piecemedium sized cauliflower
- 2dessert spoonbutter
- 1dessert spoonreputation(heaping)
- 1pinchsalt
- 1pinchgrated nutmeg
- 1pinchblack pepper
- 1tablespoongoat cheese
- 3pieceegg yolk
- 2tablespoongrated cheddar cheese
How to Make Cauliflower Soufflé Recipe?
- Separate only the florets of the cauliflower from the stems.
- Put the milk, garlic and cauliflower in a medium-sized pot and cook over medium heat until the cauliflower is tender, about 15 minutes. Blend the cooked mixture until smooth.
- In a medium sized sauce pan, fry the butter and flour until the smell comes out. Add the cauliflower puree little by little to the roasted mixture and cook, stirring constantly, until it thickens.
- Add salt, grated nutmeg, and black pepper to the cooked mixture and remove from heat. Finally, add the goat cheese and egg yolks one by one to the hot mixture, mix, and pour into a bowl to cool.
- Foam the egg whites in a separate bowl with a mixer until stiff.
- Add the egg whites little by little to the lukewarm cauliflower mixture and mix with a spatula.
- Grease the soufflé dishes with butter.
- Divide the soufflé mixture you have prepared into bowls, lightly tap it on the counter, and spread thinly on top.Add the grated cheddar cheese and bake in a hot, fan oven at 200 degrees for 15-16 minutes.
- Serve the soufflés hot, straight from the oven. Enjoy!
